Marion calls this dish "a holiday on a plate" as it always reminds her of beach holidays, sand in her feet, a Pina Colada in her hand and a big giant Pineapple Fried Rice. She served hers in a lovely pineapple bowl but I was too lazy to buy a whole pineapple and go through the rigmarole of digging out the flesh. Still, it was tasty, and hubby proclaimed so, upon putting the first scoop into his mouth.

Now perhaps tonight I'll dream of being caressed by the gentle sea breeze as I watch the golden sunset from a shaded spot on the soft, warm sand, with an iced cold Pina Colada in my hand.
