        Finding that Kok Thai Restaurant makes their own XO sauce and sells it in little jars is a boon to me. This iconic Hong Kong condiment is bursting with umami flavours that goes well with almost any savoury dish. I use it most often to fry noodles, and it's a great hit with hubby. 

XO Sauce Fried Noodles

        As I avoid the yellow noodles like the plague, I opt to use dried vegetarian noodles, and my favourite brand is Singlong. The usual ingredients would be chicken fillet, prawns, fishballs and some greens. And the fried noodles will be topped with  omelette shreds and crispy fried shallots.
