I have to dedicate an entire post to this late lunch / tea as I want to be reminded of how scrumptious this meal was. Hubby came up with the classic French snack served at cafes and restaurants...the croque madame with a Malaysian twist. In France, you can find both the croque monsieur as well as its variation, the croque madame, the latter being served with either a fried or poached egg on top. The British would roll their eyes and retort, “Trust the French to make a ham toastie and then give it a fancy name!” Well, they are only partially right. A croque monsieur or croque madame is essentially a hot sandwich made with ham and cheese, but its preparation and the use of the Bechamel sauce thrust it to a whole new level.

Back to hubby’s Tweaked Croque Madame...he made use of what we had in the kitchen and improvised according to what we like. So hubby’s Tweaked Croque Madame had :
Chopped onion, chilli and Laughing Cow cheese cube |
Instead of ham (which we don’t have at the moment), hubby used the good old canned tuna.
Mix all the above with tuna and add a dash of Maggi chilli sauce |
He then spread it all on lightly buttered bread and arranged cut cherry tomatoes on them.

Next step featured the all-important beaten egg. The sandwich was dipped into the beaten egg.

And then in it went into the waiting hot oil.

Waste not, want not. As there was leftover beaten egg, hubby churned that into a wee bit of fluffy omelette, which he used to top the toastie, hence it became a madame, rather than a monsieur. Regardless of the toastie gender, it was oh-so-yummy!
