When we dined at Putien, One Utama, a few years ago, we fell in love with their claypot chicken in fermented red rice wine. I did try to replicate the dish using only the red rice wine, but there was something lacking in the taste. A search on several blogs that featured this dish revealed that adding the red yeast residue would make the difference. And today, with that added, I nailed it! As it’s quite an easy dish to cook, it can be a regular week night dish, which would delight my Foochow husband no end!
