MCO - Day 15

1 April 2020     Day 15 of Movement Control Order

        KFC and Texas Chicken, move over! Here comes Irene’s Chicken Tenders : 
May I present Irene’s Chicken Tenders?

        It was actually my first attempt. Racking my brains, I tried to think of what to cook so as to not repeat any of the dishes (well, at least the meat dishes) that had been dished up the past 14 days. The strips of chicken fillet were staring right at me when I opened the freezer. So I thought I’d do something with them. And that’s how Irene’s Chicken Tenders came about. The meat was merely marinated with salt, sugar, pepper, cornflour, a dash of oyster sauce, a sprinkle of curry powder and sesame oil. The batter...ah...that was really crispy and nice. It’s a mixture of self raising flour and cornflour. Hubby loved it and said it reminded him of prawn fritters. Now, is that a hint? 🤔

        A dry dish like Irene’s Chicken Tenders must be accompanied by something wet. So I cooked steamed tofu with mushroom and minced meat, which hubby also relished. And we needed some greens too...served in the form of stir-fried French beans (oh yes, I’ve run out of ideas for vegetables, so vegetable dishes will be repeated for this Phase 2 of MCO, ok?)
