51 days of restricted movement decree, 50 homecooked dinners with non-repetitive meat dishes (because we had 1 takeout KFC dinner)...wow...that’s truly a personal feat! The bonus of working from home, the endless recipe ideas from the Internet, the use of much-treasured but underused bilingual cookbook collection and a very appreciative plus supportive hubby...all these helped to make the 50 homecooked dinners a reality.
So, to commemorate this Golden Jubilee, we jumped on the bandwagon and made Nasi Lemak! This must be one of the hottest homecooked dishes served during this MCO, as testified by countless documentations on social media. Even my good friend, Lee YK, made this, with a vlog to boot! His wife, Clare, kindly gave me a step-by-step tutorial over WhatsApp on how to prepare the sambal.
A Nasi Lemak Affair |
As both hubby and I have a penchant for the butterfly pea flower rice, we decided to incorporate that into our nasi. Since we had calamari in the freezer, hubby decided to make his specialty : battered calamari, as an accompaniment to our Nasi Lemak.
Despite not being a fan of nasi lemak, hubby enjoyed tonight’s dinner very much. He was all praise for everything...from the fragrant butterfly pea rice to the fried peanuts and fried anchovies, and especially the sambal ikan bilis! As for me...I can’t stop grinning like a Cheshire Cat for I never thought I could succeed in making this!
